
Stop Waiting for Your Oven to Heat Up
Most deck ovens work by heating the air or the stone. It’s a slow process. You’re basically waiting around for the heat to crawl its way into your food. We do things differently. We use short-wave infrared (SWIR) tubes. Instead of waiting for the air to warm up, these tubes blast energy directly into the dough using radiation. It hits 300°C in seconds. **It’s fast. Really fast.**And that changes your whole workflow.
Why it actually works
Here is the secret: short-wave radiation has a much shorter wavelength than your old heating elements. It doesn’t just sit on the surface; it sinks right into the pastry almost the moment you turn it on. The tungsten filament inside reacts instantly. No lagging, no “warming up” period. You flip the switch, and the heat is there.
The guts of the machine
We don’t cut corners on the materials. The tubes are made from high-purity quartz glass. We use this because it can handle the shock of jumping from room temperature to 300°C without shattering. Inside, there’s a halogen gas mix that keeps the filament from burning out too early. Depending on your setup, we use R7s or SK15 connectors. They’re designed to be drop-in replacements, so you don’t have to rebuild your whole oven to use them. We even add a special coating to the quartz. This makes sure the heat actually hits your food instead of just baking the ceiling of your oven.
A few things to keep in mind
The best part? You get total control over the crust. Because the tubes react so quickly, you can pulse the power to keep the temperature exactly where you want it. But a heads-up: these things are power-hungry. They pull a lot of current to get that instant ramp-up. Just make sure your wiring and relays can handle the peak load, or you’ll be tripping breakers all morning. Also, check your cooling fans. If they aren’t aimed right, that leftover heat can soak into your electronics and fry them over time. Keep it cool, and you’re golden.
