
Getting the Heat Right in Rotary Ovens
Nobody likes a tray of bread where half the loaves are golden brown and the other half look pale and underdone. It’s frustrating. Usually, that happens because of “cold spots”—those annoying gaps in the oven where the heat just doesn’t reach. To fix this, we stopped relying entirely on blowing hot air around and started using quartz infrared heating tubes. Here is why that actually works.
Why we use radiant heat
Think of it like the sun. You don’t feel the air getting warm; you feel the rays hitting your skin. That’s radiant heat. Inside our tubes, a tungsten filament glows and sends out short-wave infrared radiation. Unlike hot air, which can get blocked by a crowded rack of trays, these waves cut right through. We don’t just throw a few tubes in there, either. We overlap them. As the rack spins, your product passes through these intersecting zones of heat. It basically kills the “shadow effect,” so the heat hits every single loaf from every single angle.
The nitty-gritty on the gear
We use high-purity quartz glass. Why? Because it can handle the shock of extreme temperature swings without cracking, and it lets the IR heat pass through without blocking it. These things are powerful. They hit the target temperature in seconds, which means when you open the oven door and all that heat escapes, the oven recovers almost instantly. One heads-up for the folks doing the wiring: watch your voltage drops. When you’ve got a massive array of these tubes, it can really put a strain on your contactors.
The trade-offs (because nothing is perfect)
Look, these tubes are beasts when it comes to heat, but they’re fragile. They aren’t meant to take a hit. If your oven layout is a bit shaky or there’s a chance a baking tray might bump into them,put some guards on them. It’s not worth the risk of a shattered tube. Also, you have to be careful with your PID controller. If it isn’t tuned right, the temperature can overshoot, and you’ll burn through your filaments way faster than you should. A bit of time spent on calibration goes a long way in making your hardware last.
