
Stop Burning the Outside of Your Meat
We’ve all been there. You’re roasting a thick cut of meat, and by the time the center is actually safe to eat, the outside looks like a charcoal briquette. It’s a frustrating gap to close. To fix this, we started putting short-wave infrared (IR) heaters inside convection ovens. It’s a bit of a “best of both worlds” situation: you get the deep heat of IR paired with the airflow of a standard oven to keep things moving. Why IR actually works Most ovens just heat the air, which then has to slowly nudge the heat into the meat. It takes forever. IR is different. It uses electromagnetic waves that dive straight past the surface to shake up the water molecules deep inside the tissue. We use high-density quartz elements for this. Instead of the heat just sitting on the crust, the energy hits the core directly. It’s fast. Really fast. And it means you aren’t just praying that the heat eventually reaches the middle. Keeping it under control Now, you can’t just blast IR at 100% or you’ll scorch everything in seconds. That’s where the smart stuff comes in. We use PID controllers and thermocouples to keep a close eye on things. The system watches the core temperature in real-time and dials the power up or down. This keeps the heat flow steady so the middle can catch up without the outside overcooking. The tricky parts It isn’t all plug-and-play, though. High-wattage IR tubes put out a massive amount of energy, which can get messy if you aren’t careful. If you cram too many tubes into a small space, you might warp the oven frame or fry your wiring. You have to find that sweet spot between IR intensity and fan speed to strip away the excess heat from the surface. One last tip: use high-temp leads for your wiring. And for heaven’s sake, make sure your sensors aren’t sitting directly in the line of sight of the IR beams, or you’ll get readings that make no sense.
